Red Onion, Feta and Pine Nut Flan
Serves 4

Cooking time approx. 25 mins
Ingredients:
30g/1oz butter
1 large red onion, sliced
1 red pepper, sliced
2 eggs
75ml/2½ fl oz double cream / crème fraîche
110g/4oz feta cheese, crumbled
2 tsps fresh thyme
Salt and freshly ground black pepper
1 pre-baked pastry case (20cm/8” diameter) or make recipe for vegan pastry
30g/1oz pine nuts, toasted
AND THIS IS WHAT YOU DO…

Preheat the oven to 170c/Fan 150c/Gas 3.

Melt the butter and add the onion, cook slowly for 10 minutes, add the pepper and cook for a further 10 minutes.

Mix the eggs, cream, feta cheese and thyme together, and season lightly with pepper.
4.
Carefully arrange the red onions and red pepper on the base of the flan and sprinkle over the toasted pine nuts.
5.
Then gently pour over the egg and cheese mixture over the top.
6. Bake in the pre-heated oven for about 20 minutes or until the filling is set.
