Pork Steaks with Mustard and Gherkins
Serves 4
Preparation time: 2 hrs
Cooking time approx. 30 mins
Ingredients:
4 X 175g/6oz boneless pork loin steaks
2 kiwi fruit
45g/1½oz butter
2 tbsp olive oil
Pickled gherkins to garnish
45g/1½oz shallots, chopped
45g/1½oz pickled gherkins, sliced
250ml/8fl oz double cream or crème fraîche
2 tbs Dijon mustard
1tbsp red wine vinegar
1 tsp sugar
AND THIS IS WHAT YOU DO…

Prick the pork all over with a sharp fork. Extract the pulp and juice from the kiwi fruit and pour over the veal. Turn to coat and leave to marinate for 2 hours.

Remove and pat dry, brushing off the seeds. Cook on each side for 8 minutes in the melted butter and oil until golden brown.

When cooked, remove and keep warm. Add the sauce ingredients to the pan, scraping up all the brown sediment and allow to simmer, stirring all the time for 3 minutes. Season, according to taste.
4. Serve the pork with the sauce poured over and garnished with the gherkins.
