Quorn Savoury Shepherd's Pie
Serve 4 - 6
Ingredients:
500g Quorn mince
4 rashers bacon diced (you can get bacon made from turkey or lamb)
2-3 tbs sunflower oil
1 large onion sliced and chopped
1 14oz can lentils
1 14oz can chopped tomatoes
2 tbs tomato puree
4 carrots, peeled and finely sliced
4 oz (125 gm) mushrooms finely sliced
Worcestershire sauce
Herbs and or garlic
Stock
Thickening
Mashed Potatoes
AND THIS IS WHAT YOU DO…………
1.
Pre-heat the oven to 180C Fan.
2.
Soften onions in oil, add bacon and mince.
3.
Stir thoroughly and add lentils, tomatoes, tomato puree and vegetables.
4.
Then add Worcs. Sauce, herbs, garlic, stock and thickening agent.
5.
Keep stirring and allow to simmer for a good 20 mins.
6. When sufficiently thickened, transfer to serving dish and top with mashed potato and place in a pre-heated oven 375° until the top is brown and bubbling.
