Stir Fried/Steamed Selection of Greens




This is an ideal accompaniment to Slow Cooked Lamb and other roast meats - so quick and easy.

Or try serving this with any of the Game dishes.




Utensils


  • Chopping Board
  • Sharp knife
  • Bowl for discarded outer leaves etc
  • Large frying pan or sauté pan with lid
  • Large colander for prepared vegetables



Ingredients


  • Sweetheart Cabbage, finely sliced
  • 6 Spring Onions, sliced diagonally
  • Large fennel, finely sliced
  • One Leek, finely sliced
  • Olive Oil
  • Generous knob of butter
  • 2-3 tablespoons water
  • Handful of fresh chopped herbs - parsley, dill, oregano



Method


 

  1. Pour 2-3 tablespoons of olive oil into a large frying pan and a generous knob of butter (if using) and as soon as this has melted, add the vegetables and 2-3 tablespoons of water.

  2. Stir the vegetables to coat, add some seasoning and put the lid on the pan and allow to steam for 4-5 minutes - be careful not to overcook or the vegetables will become soggy and lose their colour.

  3. Remove from the heat and stir in the chopped herbs and serve immediately.
